I was down in Belize the last twelve days working (what a rough life I know) and one of the things I was working on was scouting food stories. I had eaten at Wild Mangos before and remember loving the food, but somehow didn’t have time to stop by during my last trip in October.
Thanks to a local friend’s suggestion, we met for lunch at Wild Mangos one day and I think the food was even better than I remembered. I ordered the creamy chipotle shrimp tostadas with refried black beans, corn salsa, shrimp, chipotle, and sour cream. If not for needing to eat elsewhere during the trip, I probably could’ve devoured these every day. I stopped by Wild Mangos twice during the twelve days so full posts to come!
