No es correcto lo que mencionas Isabel, en México se hacen diferentes tipos de ceviche y no tienen su origen el cebiche peruano. Seguramente lo mismo pasa en otros paises de América Latina y Centroamérica.

Perhaps before you accused me of getting my facts right, you should’ve read the entire post as I have a section about the history of ceviche (which was not really what this post was about, but we included it anyway). And, you would’ve noticed I linked to an article about ceviche’s history and its origins in Peru. As for the pronunciation, it can be multiple ways (and spellings) depending on where you are. In Belize and Yucatan where I’ve lived and worked for nearly 15 years, it’s more commonly pronounced with the y versus h. I checked with several local chefs before publishing. I also confirmed pronunciation again right now with a Belizean/Mexican colleague sitting next to me. Thanks!
