Every October, I head down to Belize to meet up with some friends on Ambergris Caye. One of my first stops after checking in the hotel is to run next door to the El Divino Steakhouse for their ceviche. We typically get a large mixed platter that feeds two of us for a meal with some leftovers! The mixed is shrimp, octopus, and conch — the best ceviche I’ve ever had. Often times, we get a medium to go (like this) and bring it back — there is nothing better than lounging on the beach, Belikin Beer in hand, and El Divino ceviche!

And I’d never heard of ceviche until I read this post. It looks fab – especially if you’re eating it with a cold beer. Perfect. Enjoy your break.
