Although Thanksgiving has passed, Christmas is literally right around the corner! One of my favorite holiday dishes is yams (or sweet potatoes) with marshmallows. We tend to make a rather unhealthy version that ensures every bite has marshmallow topping!
To make, I just boil the sweet potatoes first and then peel. Cut them into chunks and place in an oven safe baking dish. Top them with butter, pure maple syrup, brown sugar and then cut giant marshmallows in half and place them face down on the potatoes so the tops brown and get crispy, while the insides melt on the potatoes.
What are you doing for Christmas dinner? We have already booked Robuchon (in Taipei) for Christmas Eve so it is rather doubtful I will be making any fancy dinners for Christmas this year!

who says a great dessert needs to be complicated? this is proof that it can be simple yet comforting! Love sweet potato and I am sure I will love this concoction with the marshmallow! (great website you have here! )
