Belizean Brown Sugar Mini-Donuts

Mini baked donuts made with all-local Belizean ingredients, including brown sugar and spicy cocoa.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking power
  • 3/4 cup Belizean brown sugar (if you aren't in Belize, use coarse, like raw, brown sugar)
  • 1/4 tsp nutmeg
  • 1 tsp Belizean spicy cocoa (If you aren't in Belize, use high-quality cocoa powder)
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 cup butter, room temperature
  • 1/2 cup milk
  • 1 egg

Method
 

  1. Pre-heat oven to 350F. Lightly grease mini-donut pan.
  2. Mix flour, 1/2 cup brown sugar, baking powder, salt, nutmeg, spicy cocoa, and 1/2 tsp cinnamon in bowl
  3. In another bowl, beat egg. Add vanilla extract, milk, and 1/4 cup melted butter.
  4. Add flour mixture to bowl with wet ingredients. Mix thoroughly to ensure no lumps.
  5. Fill mixture into mini donut pan about halfway
  6. Bake for 14 minutes or until donuts are done
  7. Mix remaining sugar and cinnamon with 1/4 cup melted butter and pour over donuts. You can sprinkle more spicy cocoa as well.
